Charcuterie Classes - Matakohe, Kaipara
We would like to introduce you to the world of Charcuterie, the original 'slow food'. Charcuterie is the branch of cooking devoted to prepared meat products, such as bacon, ham, sausage, terrines, galantines, ballotines, pâtés, and confit, primarily from pork. Come and learn the skills needed to start your own journey into the world of these tasty artisan products. All the pork used in our classes is free range, we do not use any artificial additives or preservatives and as always, everything is gluten free.
We currently have three classes on offer which are detailed below. Classes are on Saturdays and run from 10am - 3pm with lunch provided. Minimum class sizes will apply, so please read the terms and conditions and follow the link to our online shop to choose and book a class. If a class has more than one date on offer, there will be a dropdown box to choose the date that suits you.
The Breakfast Club
Bacon & Sausages
This is a hands on class where you will make your own bacon and sausages to take home. Two methods of bacon making are taught, wet and dry cured. The wet cure process will be demonstrated and then we will make dry cured bacon together and you will take this home with you.
You will receive full course notes with additional tried and tested recipes for you to make at home.
Class also includes a Charcuterie platter to share for lunch accompanied by a glass of wine or beer.
Dry Cured Bacon, Meat & Salami
This is a hands on class where you will be taught the process of curing whole muscle cuts of meat and put this into practice by making your own dry cured bacon as well as one other cut of meat to take home.
We will then make salami as a class to teach you the process and what you take home from this is a casing pack so you can make your own salami at home. You will receive full course notes with additional tried and tested recipes. Class also includes a Charcuterie platter to share for lunch accompanied by a glass of wine or beer.
Terms & Conditions of Booking
All class bookings must be made via our online store on a first come first served basis. There are minimum class sizes dependent on class and location, so please note this when purchasing. When you have purchased a class you will receive a confirmation email (please check your junk mail if it doesn’t appear in your inbox within 10 minutes), this is your virtual ‘ticket’. However you don’t need to bring it with you, as your name will be your place holder for the booked class. You will be sent an email a few days prior to the class date with further details of how to get to the location and what to bring with you on the day.
Booking & cancellation policy is as follows:
We reserve the right to cancel/postpone classes in the event of not enough attendees booked, and will issue a full refund or a credit note for an alternative date.
Cancellations must be made via email, and if received no less than seven days prior to the class date, a full refund will be given. Cancellations received between three to six days prior to the class date will receive a fifty percent refund OR a credit note for an alternative date, whichever you choose.
No-shows or cancellations made less than three days prior to the class date will not be refunded, however you may send someone in your place.
